Line a baking sheet with a silicone mat or parchment paper and set aside. Make sure the chickpeas are as dry as possible and remove any loose skins.
In a medium bowl, combine 2 tablespoons of water and all remaining ingredients, except the chickpeas and spice blend. Once combined, add the chickpeas and toss to coat evenly.
Transfer the chickpeas to the prepared baking sheet, spreading evenly in a single layer. Bale for 30-35 minutes , stirring every 8 to 10 minutes until lightly browned and crunchy. Sprinkle the roasted chickpeas with your blend of spices and serve warm or at room temperature.
